I have only just thought through the recipe such as it is and already ate today so will have to be an experiment for another day.
If you don't know what a galumpkie is....you are probably not of slovenian descent....I am. I know what a galumpkie is....it is a cabbage roll with meat and rice inside. What would happen if....
One was also of Irish descent and liked potatoes......
What if you .....boiled some potatoes and riced them... fried up some bacon.... poured out most of the bacon fat...added a bit of olive oil....and browned the potatoes. Meanwhile dice the bacon fine...if you cooked it crispy it should just volunteer. What, no onions? Calm down! There will be onions. In another skillet, add some olive oil, and onions.... you get to pick... vidalia, red spanish, green scallions, shallots, chives, ......and you chop it to suit. I would think very fine at first but reserve some coarse chopped for later. Oh, and garlic.... yes! Peppers? I should think. Hot peppers? know your audience!
To that skillet add ground beef or ground pork or both and cook until done. Drain and add to the skillet with the potatoes and bacon. Carrots? grated. Spinach? coarsely cut. Tomatoes? Most definitely... I should think stewed cut into chunks would work best.
Meanwhile you have a head of cabbage....some steam it before proceeding forward... I don't... and so you have the skillet of browned riced potatoes, onions, meat, carrots, spinach, peppers...add in coarse chopped onions... and you just roll it all up in the cabbage leaves and place in a baking dish.....
pour some more stewed or diced tomatoes on top.... and let it bake. and there you have it!
